We cut the tofu, more or less the amount you see in the photo, mine is from Alcampo, the cheapest and richest I found.

Now we will make the "egg" with chickpeas. I add two tablespoons and a teaspoon of pepper, salt, paprika and garlic. First I add a little bit of water to create a thick mass, then I add water little by little to make it feel like an egg. Do not add all the water at once, lumps will appear.

After this, we pass the tofu through the chickpea and then through the panko.

Options: You can make it with egg instead of chickpea flour, I do it this way because when I add the seasonings, the flavor is more intense. You can also put just salt and that's it or the spices you like. You can make it with crunchy bread crumbs instead of panko, I recommend the Dani brand which is fat, the thin one sucks oil. In panko I buy it in Asian stores, this one in particular in the Chinese that there is in països catalans next to Mercadona of Reus.
