Scrambled eggs with potatoes and blood sausage

We cook the potato using the lekue (8 min already peeled and cut into the desired shape) or in a pot with water (40 min depending on the potato).

While the potato is cooking, crumble the blood sausage and put it in a frying pan with about 10 ml of extra virgin olive oil, adding more if necessary.

When the black pudding is slightly cooked, drain the peppers and add them to the black pudding to cook them a little.

When the potato is cooked, it can be added to the blood sausage pan to acquire the flavor of the same (directly from the lekue, and cooked with casserole by peeling and cutting it to taste).

Place in a tray the contents of the pan already mixed (potato, blood sausage and peppers).

In another frying pan or in the one previously used, fry the fried eggs with a pinch of extra virgin olive oil and salt.

Place the eggs on top of the potato, black pudding and bell pepper mixture and once they are all ready, cut them and stir.
