Zucchini cannelloni with chicken

First slice the zucchini and place it on absorbent paper to absorb all the moisture. Meanwhile we cut the onion into small pieces and the chicken into small cubes.

Pour the EVOO in the pan and sauté the onion, when it is a little poached add the chicken cubes. It is time to add salt to taste, parsley and ginger powder. Let it cook while stirring.

Once the chicken is done, add the 3 tablespoons of crushed tomato and let the sauce evaporate until it looks more or less like in the second photo. Then turn off the heat and set aside.

At this point we put together 3 slices of zucchini, add 1-2 tablespoons of chicken and roll up to make a "cannelloni". We put them in a tray suitable for oven.

When they are all done, add half of the carton of evaporated milk to soak a little, put the cheese slices on top and pour the rest of the carton of evaporated milk on top. Add some grated cheese and bake in the oven for about 15-20 minutes at 200°. When the grated cheese begins to brown, check that the zucchini is soft, remove and eat!
