Put the lentils in a deep dish and cover them with water for about 1 hour.

In a frying pan put: EVOO + onion + garlic + bell pepper + bell pepper + carrot + chopped tomato + salt + pepper and cook covered until the vegetables are golden brown and then grind them.

Then add the lentils, potatoes, bay leaf, paprika, chorizo chunks (optional) and broth and cook covered for about 1 hour.

Let stand 10 minutes before serving, but they are much better overnight!
