Put the textured soybeans in a deep bowl, add boiling water and leave for 20 minutes to hydrate. Then drain.

In another bowl add and mix the yogurt, coconut, lemon, pepper and salt.

Sauté the chopped onion with a dash of AOV and once ready, add the texturized soy, a little salt, the curry and let it cook for 10 minutes.

4. Add the mixture prepared in point 2 and cook for a couple of minutes more and it is ready to serve.

* Suggestion: Serve with basmati rice or a mixture of long rice, wild rice and brown red rice.
