Grate the zucchini and carrots and drain them.

Mix the egg yolks with the zucchini and carrots and whip the egg whites until stiff.

Mix the whipped egg whites with the zucchini and carrots. Once mixed, spread it on a tray and put it in the oven at 180°. I left it in the oven for 10 minutes or so, until the dough was golden brown.

In a pan put all the ingredients you want to use for the stuffing. In my case, mushrooms, half an eggplant, spinach, ricotta and curry.

Finally, remove the "dough" from the oven and spread the mixture on it. Once spread out, roll it up.
