Rice noodles with shrimp, clams and vegetables

Wash and cut the vegetables. In my case I have cut zucchini and carrot into strips, leek into slices and green beans into small pieces. Sauté them with a little EVOO and add salt when they are almost done. Once done, remove and set aside.

Add a little oil and sauté the shrimp, when they are almost done add the clams. Add spices to taste (in my case garlic powder and parsley).

Cook the rice noodles according to the manufacturer's instructions. Mix the vegetables with the shrimp and clams, add the rice noodles and soy sauce. Mix well and ready.
