Peel the tomato, and cut the other vegetables into small pieces (except the mushrooms).

Make a stir-fry with all the vegetables

Cut the tenderloin into cubes and sauté with salt and pepper and add the mushrooms.

When the sofrito is ready, grind it and add it to the loin to make the sauce.

Let everything cook over medium heat
