Chop the vegetables and season the chicken with garlic, salt, pepper and Provencal herbs.

Brown the garlic and chicken thighs in the casserole where we are going to make the stew.

Remove the chicken and brown all the vegetables for 5 minutes .

Then add the potatoes chascadas (cut the potato levering with the knife not making precise cuts), the chicken and salt. Cover everything with vegetable broth and 2 teaspoons of turmeric for color. You can also add crushed tomato.

Cook until the potatoes fall apart. I do it over high heat for 10 minutes. Then I put the lid on and put it on medium heat (it has to keep boiling) and leave it for 20 more minutes. I like my potatoes well done. AND READY!
