Zucchini ravioli

Preparación de la receta

Peel the zucchini and cut into thin strips lengthwise (I used a mandolin).

Place it on a plate and microwave it for about 8 minutes (I used the lekue steam case).

While the zucchini is cooking, cut and peel half a sweet potato.

In a frying pan add the sweet potato in pieces with EVOO and let it poach for about 10 minutes.

When we see that the sweet potato is soft, add the cod and spinach, along with garlic and pepper. Stir well, trying to make a dough. When it is almost done, add the milk and cheese. Mix well.

Once the zucchini is cooked and the dough is ready, assemble the ravioli. We put 2 strips of zucchini forming a cross, add a spoonful of filling in the middle and fold.

Finally place the ravioli in a dish and put them in the oven or in the air fryer for 5 minutes at 180°. And they are ready.
