Pour 1 tablespoon of EVOO in a frying pan, add all the chopped vegetables, and add a little salt. Cook over low heat until done.

While the vegetables are being poached. Take a griddle or a frying pan and pour 1 tablespoon of EVOO, season the salmon loin with dill and salt, and put it on the griddle until it is done.
