Zucchini stuffed with lentils

THE GRAMS ARE RANDOM. Put the zucchini in the microwave wrapped in film for about 3 minutes (until you see that they are tender). Then remove the flesh from the zucchini and cut it into small pieces.

Fry in EVOO the garlic (3 cloves more or less), the onion and then add the zucchini that we have chopped before. Once we see that it is almost done, add the chopped mushrooms. When they are ready, add the 5 crushed tomatoes.

When everything is ready, add the tender lentils (they can be canned, previously washed or boiled, as in my case). Season with salt, pepper and basil.

Then we stuff the zucchini. I have added a little cheese and I have put them in the microwave to gratinate. You can also make bechamel sauce or eat them plain. No need to put them in the oven. And ready to eat!
