Make several cuts in the fat part of the fillets. Season with salt and pepper.

Put a frying pan on the fire and wait until it is very hot. Add the magrets with the fat side down. Leave them for about 6 minutes. Then turn them over and leave them for 6 minutes more.

Remove and put something on top to keep it warm.

Remove a little of the fat from the pan and add a little EVOO. When it is hot, add the onion cut in julienne strips. Let the onion brown. Add the red wine and wait for it to reduce.

Then add the red fruits. Add the chicken broth and wait for it to reduce.

Serve the magrets with the sauce on top.
