Crack and beat the eggs in a large bowl.

Once well blended, add the finely chopped spring onion, the finely chopped green chilli and the coriander along with the turmeric and salt. For a spicier touch, you can add a teaspoon of chili powder.

Mix the beaten eggs well with the rest of the ingredients.

Pour a teaspoon of oil in a non-stick frying pan, ideally about 20 cm in diameter, and place over medium heat. When the oil is hot, add 1/4 of the mixture, for example with a ladle. Let the mixture cover the entire pan.

Let the omelet cook for about 1 minute, with the egg set but slightly soft on the surface.

Turn the omelet over, or fold it French omelet style, and let it finish cooking before transferring it to a plate.

Repeat the process with the rest of the mixture and you're done!
