To make the mango sauce: Cut and peel half a mango. We make a few segments to decorate the glass at the end. The rest we grind it until we get a thick sauce. Strain it to remove any remaining pulp. Add the aove, vinegar, salt and the juice of half a lime. Mix well and set aside.

In a bowl, mix the tender sprouts with a little sauce so that they are well seasoned.

Grill the prawns and peel them when they have cooled down a little.

Assemble the glass with the dressed sprouts, half an avocado cut into small squares on top, the prawns on top and decorate with the mango segments. Finish with a little mango sauce for dressing. Ready to enjoy!
