NOTES TO THE INGREDIENTS: 🔸 You will need 320gr of orzo (I could not select it in the ingredients) (Orzo is a type of wheat semolina pasta, very typical in Italy. You could substitute it in the recipe with rice). 🔸 You need also truffled olive oil.

Boil the orzo (following the instructions on the package) with the bay leaf. Strain it and reserve the broth.

Heat the oil in a pot and cook the onion with a pinch of salt for 15 minutes over medium heat. Stir from time to time and add the chopped garlic.

Add the wine and cook until it evaporates. Add the mushrooms and cook for 5-7 minutes more. Once everything is cooked, put it in the blender. Add the cornstarch and 100 ml of the broth and blend until a more or less thick puree is obtained.

Add the orzo to the pot with the mushroom puree and stir well. Cook for another 5 minutes and turn off the heat.

Add a dash of truffled olive oil and stir well. Taste and correct the salt if necessary.

Serve the dishes with a tablespoon of Parmesan cheese and chopped chives.
