In a separate bowl place the whole wheat spelt flour, salt and EVOO. To this bowl add the water with the yeast and begin to stir well with the help of a shovel or tongue.

Once we obtain a more compact dough, we spread flour on a flat surface and knead for 5-10 minutes.

Once kneaded we make a ball and leave it in a bowl covered with a cloth to rest for 1h. (You can take advantage of this time to prepare the ingredients that you will put on the pizza).

After that hour the dough will have risen, now we can make a large pizza or cut it in half and have two medium ones. In either case, we will shape it with a rolling pin on baking paper (in the photo I decided to make a small one and freeze the other half of the dough for another time).

We assemble the pizza to our taste with the "raw" dough. Once we put it with the oven preheated on a baking sheet will be 20 minutes at 200 ° C at a medium-low and 10-15 minutes at 180 ° C at a medium-high, heat up and down with fan (always controlling so that we do not burn).
