First, fry the garlic and onion until golden brown.

Add the mushrooms and simmer until they release all the water and evaporate well. Add salt and pepper to taste. In my case, I also added nutmeg (optional to grind the ingredients before making the béchamel sauce).

Add the flour and cook with the mixture for about 3 minutes.

Once it is well incorporated, add the milk or vegetable drink and the blue cheese.

Mix everything well until the cheese is well dissolved and the béchamel sauce for the corquettes is created.

Once we have the desired texture, pour all the dough in a bowl and cover with plastic wrap well stuck to the mixture. Leave in the refrigerator overnight (preferably to be able to make the shape well and do not fall apart when cooking).

When we have the dough ready and cold, we begin to make the shape of the coruquette. Dip in beaten egg and bread crumbs. This way until we finish them all.

Finally, we fry them in EVOO or bake them in the oven for about 20 minutes at 180 degrees. And enjoy! 😋😋
