Grate and shred the two carrots. Grind 8 walnuts and add them to the carrots.

Prepare the date paste by pitting 7 dates and beat together with 125 ml of milk until a homogeneous mixture is obtained.

In a bowl, mix the crushed walnuts with the carrots, the date paste, two eggs, the flour, a tablespoon of EVOO, a teaspoon of cinnamon and a teaspoon of baking powder. Stir until all the ingredients are well integrated.

Pour the mixture into a baking dish and bake for 25-30 minutes at 180°C (with the oven previously heated).

While the cake is baking, prepare the topping with 75ml of milk + 4 dates + 150g of cream cheese (half a package). We beat all the ingredients and put it in the refrigerator to solidify.

When the cake is cooled, spread the frosting, add 5 more walnuts on top and sprinkle a little cinnamon to taste. Let it cool and enjoy !
