We must have had the salmon, if it is fresh, frozen for at least 3 days to avoid Anisakis. Once thawed, cut it into very small pieces and reserve in a bowl.

Add the soy sauce, lemon, honey, vinegar and oil to the salmon. Chop the basil very small and add it to the mixture. Cover with cling film and leave to marinate in the refrigerator for about 20 minutes.

While the salmon is marinating, cut the tomato and onion in brunoise. Mix it and add a pinch of salt. On the other hand, mash the avocado with a fork and set aside.

Once the 20 minutes have elapsed, we can plate the dish. In my case I put the tomato and onion first, then the avocado and finally the salmon. At the end I add some sesame seeds that I toasted in a frying pan to enhance the flavor.
