Of lemon you will need the juice of one lemon and the zest of half a lemon.

Put all the ingredients in your food processor and mix well until blended.

Put the dough in the fridge for 30 minutes, then make the truffles with your hands and coat them with grated coconut.

When grating the lemon peel be careful not to take the white part because it will be bitter. If the dough is too dense, add water until the desired texture is obtained.
