Hello Realfooders. Today I bring you a very special and easy to make Indian recipe. The first thing we are going to do is to preheat the oven for 10 minutes at 200°. Meanwhile we are going to mix in a bowl two tablespoons of chorizo bell pepper paste, two tablespoons of oil and two tablespoons of honey with a little salt and pepper and paint with the mixture all the cauliflower. When it is well soaked with the sauce we put it in the oven for about 45 minutes.

We take the opportunity to prepare the quinoa that we are going to boil first with water and salt. When it is ready in a pan put a little oil and cook two cloves of garlic, an onion, fresh ginger all very chopped. When they begin to brown add the quinoa and a spoonful of Garam masala and cook everything together.

Now we are going to prepare the green sauce. Finely chop the fresh herbs (dill, mint, cilantro and parsley), and put them in a mortar with 5 cloves of black garlic, the juice and zest of a lime, a spoonful of capers, the jalapeño bell pepper and virgin olive oil and mix everything very well.

After 45 minutes, check with a knife that the cauliflower is well done and cooked and serve it in a serving dish on a bed of quinoa, pour over the green sauce and toppings: pickled red onion, capers, jalapeño peppers, chopped hazelnuts and chopped olives. Et voila! Ready to eat!
