In a dish, crack an egg and add the curry with a pinch of salt and mix.

Brush the egg on a slice of bread. Grate the cheese and put it on the bread. Toast the bread in a hot frying pan. Leave in the pan until golden brown and crispy. Repeat on all sides of the bread.

Cut the cherrys in half. Prepare the avocado in a bowl by mashing it with a fork, there should be a few pieces of avocado left but it should be creamy.

Assemble the sandwich with the avocado, cherries, fresh cheese, a little pepper, a touch of salt and lemon zest.
