While the rice is cooking, in a frying pan fry the red, yellow, red bell pepper, onion and garlic very finely, add the tomato, let them integrate well, add the mushrooms, let them cook for about 10 minutes, add a little vegetable stock.

When the mushrooms are ready, add them to the rice, mix smoothly, if we see that the rice is a little dry add water, and let it simmer.
