Ask the butcher to cut the sirloin into medallions. Season with salt and pepper and sear in a frying pan on both sides.

Cut the onion into small pieces and sauté. When it is poached add the mushrooms in slices, not too small (they lose a lot of water).

Add the wine and let the alcohol evaporate for about 5/7 minutes at high temperature. Lower the temperature and add the cream (I have also added a splash of chicken broth to make it more liquid but it is optional).

Add the sirloin and cook for 15/20 minutes over medium heat.
