Gnocchi with salmon and cream of artichoke soup

In a frying pan fry the chopped garlic in half of the AOVE. When it is golden brown, add the artichoke in small pieces and then the almonds.

Once it is ready, add the evaporated milk and spices to taste, and leave it for about 5 minutes over low heat.

After this time, pour the sauce in a glass suitable for blender and blend everything. Set aside.

In the same pan, add the other half of the EVOO and fry the onion for a couple of minutes. Add the diced salmon and let it cook over low heat (the time depends on how well you like the salmon ;) ).

While the salmon is cooking with the onion, in a separate saucepan put water to boil. When it is boiling, add the gnocchi, and after two minutes, when we see that they float, they are ready to be strained.

Mix the gnocchi with the salmon and onion and top with our delicious artichoke cream. It's tremendous!!!!
