Mash the bananas to puree them.

Beat the eggs until they are slightly thickened and foamy (they get a whitish color) and mix with the bananas. Add the oil and yogurt and mix well.

In a separate bowl mix the flours, yeast and spices. Add the sifted or sieved dry ingredients (if possible to avoid lumps) and mix until well integrated but without over mixing the mixture.

Add the chopped walnuts and stir in.

Incorporate into a mold (mine was one of those elongated ones, but a round one will also do, as long as the mixture goes in ☺).

Bake at 180°C for approx. 50 min. After 50 min. check with a knife, if it comes out dry it is ready, if not leave 5-10 min more. (Each oven is different so check to make sure it doesn't burn but DO NOT OPEN THE OVEN UNTIL AT LEAST HALF OF THE TIME HAS PASSED OR THE CENTER WILL SINK)

Remove from the oven and let stand 10 min in the mold. Unmold and let it cool completely, preferably on a wire rack to prevent moisture from forming on the base AND READY!
