In an express pot or casserole put a finger of olive oil once hot add the sofrito (garlic, onion and chopped bell pepper) and the bay leaf. When it gets a little color add the rest of the diced vegetables (zucchini, eggplant, carrot and potato). In my case I use small potatoes and I add them whole.

Once the vegetables have browned a little, add the paprika and stir. Be careful not to burn it, add grated tomato or a generous spoonful of fried tomato and stir everything.

Pour the lentils (I usually put a quarter of a kilo package and I get enough for four or five plates), water, cumin and salt. If you want to add chorizo, now is the time.

Close the pot and wait about 20 minutes. My pot is electric and I put it on for 15 minutes, open it and adjust the salt, water and check that they are tender.
