Put the sweet corn, corn flour, dates, salt, unsalted butter (if it contains salt, do not add the teaspoon and a half of salt-CAFÉ-size) and the eggs in a bowl. Grind with the mixer. AND WE ALREADY HAVE THE DOUGH. (I have crushed it quite a lot, but you can leave some pieces of corn if you like the texture).

We put a little EVOO in a non-stick frying pan and add a ladle of the dough. Then we spread it as much as we can until it is about half a finger thick (or less, with the main image you can get an idea of the thickness.) It has to be large in size (not in thickness) because then we will fold it and it will be easier for the filling not to come out. Cover with a pan lid and leave it for 5-7 minutes more or less. You have to turn it over when the pancake leaves us, if you try it on one side and you see that you can not because it breaks, you have to leave it longer, until you can put the spatula without problem, and believe me, it comes out on its own, but give it time).

BUT ALWAYS WITH FRESH MOZZARELLA BASE (or Latin cheese if you have it hehe). In this case, I have put two or three slices of fresh mozzarella, I have covered with the pan lid so that it melts a little, and then I have added two spoonfuls of the mixture of tuna with avocado mayonnaise. Finally, I folded it with the help of the spatula and served it (FOR MY TASTE IT IS BETTER COLD).

-For the avocado mayonnaise, simply blend 3 large, RIPENED avocados with 5 heaping tablespoons of homemade mayonnaise (if possible with a mild flavor). -IF THE AVOCADOS YOU HAVE ARE SMALL, PUT LESS MAYONNAISE, AND IF YOU SEE THAT IT LACKS, ADD MORE MAYONNAISE. And voila, avocado mayonnaise is ready (plenty of it for the 10 cachapas). -And for the filling: Drain the tuna and mix it with the avocado mayonnaise (I have added the mayonnaise little by little, it is better to go slowly and do things right, than to overdo it and have mayonnaise with tuna instead of tuna with mayonnaise).
