We hydrate the texturized soybeans and once hydrated, we put them to drain. The hydration time is usually specified on the package.

We prepare the pico de gallo. For it we chop 2 tomatoes and half a sweet onion. Add a teaspoon of finely chopped fresh parsley and the juice of half a lemon. Let stand.

Chop 1 onion and a clove of garlic and fry for 1 minute. Add the chopped bell pepper and spice. Cook everything together for 5 more minutes. It is time to add our textured soy and cook it together with the vegetables for about 5 more minutes. Once our mix is golden brown it is time to turn off the heat and add the corn. Stir and mix everything in the pan.

We assemble our burrito. First a layer of guacamole, then our soy and vegetable mix, then we add the pico de gallo, and finally a touch of feta cheese.
