Pumpkin risotto with roquefort cheese

Peel and cut the pumpkin into small pieces. Put it on a tray with baking paper and spice it with salt, rosemary and olive oil. Roast it at 200º for 20 minutes (until it is soft).

Cut the leek and the onion and poach them in a deep frying pan.

Add the roasted pumpkin to the pan.

Add the rice and stir a couple of times.

Leave on medium heat. Add ladles of broth, stirring the rice a little with each ladle and waiting for it to be almost all sucked up before adding the next one. This way until the rice is done.

Optional: when it is ready, add a tablespoon of butter and stir, this gives it creaminess.

Serve hot with slices of Roquefort cheese and enjoy!
