In a bowl put the ripe plantain and mash it with a fork.

Add the egg, oil, milk or vegetable drink, apple cider vinegar and vanilla. Beat until frothy.

Add the buckwheat flour, matcha tea, pinch of salt and baking soda to the liquid mixture. Whisk until all ingredients are well incorporated.

Put it in the microwave at maximum power for about 3 minutes or until a toothpick comes out clean. (Time according to microwave and power)

Unmold on a plate. Be careful it burns.

To make the topping, mix the coconut yogurt with the pure cocoa.

To decorate, add the topping, the cocoa nibs, the washed, dried and broken strawberries.
