🍔 Pea and vegetable burgers 🍔

Dice and poach the vegetables: onion, red and yellow bell pepper, zucchini and natural tomato in a drizzle of extra virgin olive oil. Season with salt and pepper. Set aside.

Cook and drain the peas. Whisk without any broth so that the dough can take shape.

Mix well the peas and the poached vegetables in a bowl. Add an egg, a little parsley, salt, the slices of bread from the previous day and integrate all the ingredients. If you see that you can not shape the dough, add a little breadcrumbs.

Form balls and flatten a little (use gloves or a little oil/water on your hands to prevent sticking).

Dredge in chickpea flour and set aside on baking paper.

Bake them in a preheated oven at 180° for approximately 15 minutes. Turn the burgers halfway through the baking time so that they cook evenly.
