Cut all the vegetables into small cubes. Clean the rabbit well and season it with thyme, nutmeg, salt and pepper. Set aside.

In a casserole with EVOO, add the spiced rabbit and the bay leaf. Fry for 15 minutes.

Add the reserved vegetables and the cayenne. Cover and sauté for 20 minutes more or until the spring onion is transparent and the rabbit is almost done, over low heat. Stir from time to time so that it does not stick.

Add 1 cup of rice, salt and pepper to taste, and stir well. Add twice as much broth or water and cover.

Cook for 10 minutes or until rice is done. If dry, add more broth/water. Let stand and serve.
