I used Kaiku Dairy-Free Whipping Cream (MUST BE VERY COLD). If you use cooking cream (since it has less fat) it will take longer to thicken and you will have to whip it longer.

Pour in the cream and add the lemon, beat by hand with a fork or whisk until thick. Then add the vinegar and beat. Finally we add the salt and we continue integrating. When it is thick we put it in an airtight container and to the refrigerator to rest 20-30'.
