On the other hand, mix the cornstarch with the egg yolks until a paste is obtained.

Once the milk has infused with the lemon rind and the cinnamon stick, strain it and put it back on low heat. Add the other mixture of the yolks with the cornstarch and stir constantly (do not let it boil).

Put it in the containers and let it cool.

Once they have been in the refrigerator for a few hours, they are perfect to be eaten with a sprinkling of ground cinnamon on top!
