PREFERMENT -In a bowl mix the warm milk with the fresh yeast and 150g of whole wheat flour. Leave to ferment for 30 minutes until it doubles its volume.

DATE PASTE -Soak the pitted dates in warm water. -Crush very well until you get a paste (I left it a little more liquid).

DOUGH - In a bowl or a mixer/blender, mix the cream with the butter. - Add the orange zest and the eggs one by one. - Add the date paste (to taste). - Knead and add little by little 100g of wheat flour and 200g of ground oats. - If necessary add a little milk (optional orange blossom or vanilla scent) - Knead until it does not stick. Add the nuts, dried fruits, dried apricots and chocolate (all crushed is better) and continue kneading. You can add raisins and other nuts if you prefer. - Put the dough in a paper mold or whatever you have at home and let it ferment for at least 2 hours. - Brush with 1 beaten egg and bake for 30-40 min at 200-C or until a dry toothpick comes out of the center of the bread. - Decorate with melted chocolate and nuts.
