Wash the quinoa and put it to cook (for each part of quinoa, three parts of water) with a generous splash of soy sauce.

Meanwhile, wash and peel the carrot and chop it finely. We also chop the avocado, tomatoes and black olives and add the corn.

When the quinoa is ready, put it in a colander and cool it with water.

Mix everything well and season with salt, EVOO and the juice of a lemon (or vinegar). Enjoy!
