Sirloin steak with blue cheese sauce and gourmet garnish

Fillet the sirloin and place it in a dish. Chop the parsley leaves and a clove of garlic and mix with a little EVOO. Pour over the meat, cover and keep in the refrigerator.

For the sauce, start frying, with a little EVOO, a chopped onion and 2 cloves of garlic fillets. Cook until golden brown and add the blue cheese. Melt briefly and pour half a glass of white wine. Stir to melt the cheese and pour a glass of meat stock and half a glass of cream. Keep over medium heat until reduced, stirring from time to time.

For the garnish, fillet two cloves of garlic and begin to brown them with a little EVOO. Add the green bell pepper and the ham, chopped. Cook a little and add the glass of rice. Cover with 3 glasses of water and add the raisins. Cook over high heat.

In the meantime, puree the sauce. When the rice is ready, set aside and sprinkle with toasted almonds chopped with a knife.

Remove the meat from the refrigerator and cook over high heat on both sides and season with salt and pepper.

Serve with the garnish and the sauce on top.
