Cut all the vegetables (zucchini, onion, carrot and bell pepper) very small and put them over medium heat with a little olive oil.

Once we see that the vegetables are practically ready, we add the can of crushed tomato. Let it concentrate well.

Meanwhile we take the eggplant and cut it into slices lengthwise.

Once we have the vegetables with the tomato ready, in a baking dish we assemble our "lasagna": a layer of eggplant and cover with vegetables, and so on until we finish with our vegetables.

Finally sprinkle the grated cheese on top and put it in the oven, previously preheated to 180º, for about 15-20 minutes.
