Cut the onion very thinly and fry in EVOO.

We put the water in a pot to heat and when it boils we put the gnocchi, once they are floating they are ready, we throw the water and mix with the onion, mushrooms and ham.

Meanwhile, in a bowl, beat the eggs, add the cheese, mix well and season to taste.

Finally we put our casserole over very low heat, immediately add the egg and cheese mixture, stir a little and remove from heat. Continue stirring until you get the texture you like.
