Pasta with mushroom and spinach sauce

We start by making the sauce: Poach the onion until translucent and add the frozen spinach and the finely chopped garlic. When everything is well sautéed, add the sliced mushrooms (300gr) and let them cook for 3-4 minutes. It is the moment to add 50 ml of cream and 100 ml of vegetable drink and let it consume a little.

Now, cook the pasta as indicated on the package and reserve about 200ml of cooking water. Add this cooking water to the sauce and let it thicken for about 10 minutes (keep an eye on it). Finally adjust the salt and pepper and serve with gratin cheese on top. Now all that remains is to enjoy!
