1️⃣Dejamos soak the pitted dates for a couple of hours. Then remove the skins and beat with a little of their water.

2️⃣A the previous mixture add the banana, egg, egg whites, oat drink, baking powder, cocoa powder and ground almonds. We beat everything.

3️⃣Engrasamos a frying pan with olive or extra virgin coconut oil.

4️⃣Vertimos the mixture in the pan, cook over low heat and cover for about 10 minutes. When we see it compact we turn it over. Leave on the heat for 2-3 minutes more.

5️⃣Dejamos cool and decorate by melting two ounces of 85% chocolate. Pour the melted chocolate on top and a handful of grated coconut.

☝🏻En instead of dates you can use a quarter cup of the sweetener of your choice. ☝🏻Yo I have used oat drink, but you can use any other vegetable drink. ☝🏻Mejor use a small frying pan, so the cake will come out fatter. If you don't have a frying pan you can try it in a non-stick pan. ☝🏻Podéis substitute the banana for a baked apple in the microwave.
