Chop the leek and garlic, when you have them poach them in the pan with a splash of EVOO. While the vegetables are cooking, chop the mushrooms.

When the vegetables are almost done add the mushrooms, salt and pepper.

Beat the eggs and mix with the cottage cheese. Add to the pan and mix everything well until the egg is done.

Add the cheese and that's it!
