Zucchini stuffed with smoked tofu and mushrooms 😋

We take the zucchini to the microwave and put it in intervals of 2 minutes per side until it softens a little. I put it 3 times.

In a frying pan with oil we brown the garlic and the onion well chopped. Clean the mushrooms, chop them very well and add them. Drain the smoked tofu, crumble it and add it too.

While the stuffing is cooking, cut the zucchini in half and empty it. Add the finely chopped zucchini pulp to the stuffing and let it sauté adding a glass of white wine.

Add the spoonfuls of tomato concentrate and let the vegetable broth reduce.

When ready, fill the zucchini and add cheese. Put it in the oven for 10 minutes at 180°C so that the cheese melts and the zucchini shell is done.
