Cook the sweet potato in the microwave for about 10 minutes. Once ready, let it cool so that it can be peeled and mashed with the help of a fork.

Melt the goat cheese in the microwave and add to the sweet potato puree. Add the spices. You can also use garlic or onion powder.

Peel the eggs and remove the yolks. The yolks will not be used in this recipe so you can save them for another occasion.

Fill each egg with a tablespoon of sweet potato puree and goat cheese and add toppings on top, in my case sesame seeds and cream cheese!
