Note that I used the thermomix to make it but it can be done with your hands just like traditional bread. First warm the water and the aove with the teaspoon of salt.

Add 250g of spelt flour, mix and then add the rest together with the chickpea flour and the yeast.

Mix and add the onion powder (if you want) and the pumpkin seeds. Continue mixing if you do, until everything is well integrated. ❗If you have a thermomix, in this last step put the spice mode on for 2 min and 30 sec.

It is not a compact dough, but rather sticky, but putting a little olive oil on your hands will help you to put it in a mold or give it the shape you want. Let it rest for at least 2 hours. Put it in the oven with an aluminum cup full of water or if you don't have one, put half a cup at the bottom when you are going to close the oven. Temperature 220°c or 200 °c if your oven has a lot of power for 20 min. Then without opening the oven lower it to 170-150°c for another 20 minutes, and it's ready.
