Crush the tomato and sauté it in a frying pan with a little EVOO and salt. While it is frying, cut half a sweet onion in julienne strips and fry it in another frying pan. Stirring every 3-4 minutes.

Peel the carrot and make the noodles (I used the same peeler to make them, I took a fairly long and thick carrot so that it was easier and there was more quantity). When we have it we put it on a plate and cover it and put it 3-4 minutes in the microwave.

When we have the tomato and onion to taste, add the carrot to the onion pan and the tablespoon of cream cheese to the sautéed tomato.

Once the carrot is sautéed, put the carrot and the onion in the dish, add the tomato sauce and grate some Parmesan cheese on top. Put the dish in the microwave with the grill for 2-3 minutes. Finally, add oregano to taste. Enjoy!
