Hazelnut and chocolate cookies without flour and butter

****IMPORTANT: The hazelnut drink that I used was the one I prepared the day before. The raw hazelnuts are put as an ingredient because there is no hazelnut flour, which was what I actually used (made from the leftovers of the homemade hazelnut drink).**** The photo is of the "hazelnut flour" which is basically the remains (pulp) of the hazelnut drink I made, I spread it on the baking sheet and put it at low temperature to dry well. The amount I used was about 250-300gr.

Mix the hazelnut flour with the muesli and blend everything together so that it is well integrated. Add the eggs and the date and beat and add the hazelnut drink little by little until you get a wet but consistent dough, not too liquid. Add an ounce of chopped chocolate and stir with a spoon. You can also add pure cocoa to the dough or cinnamon, or any other sweetener you like.

With the spoon we take a ball and put it on the baking tray, flatten it a little bit so that it is done uniformly. Bake in a preheated oven at 200ºc for 10-15min. They will be crispy on the outside and soft on the inside.

****OPCIONAL**** Once they are done let them cool and in the meantime melt the rest of the chocolate in a bowl. I added a couple of chopped hazelnuts to the chocolate to give it an extra crunch. When the cookies are cool put the chocolate decoration and let cool or eat at the time, as you like.

If you keep them in an airtight jar in the pantry (it is important that they are completely cooled so that they do not steam and become moldy), they can last perfectly 1 week.
