Spiced couscous with vegetables

Preparación de la receta

in a bowl pour the couscous together with 350g of water, 40g of oil and 1/2 teaspoon of salt. mix and set aside.

Chop the onion, parsley and cilantro and sauté with the rest of the oil in a large pot over medium heat.

add the sliced carrots, chopped asparagus, diced pumpkin, turmeric, cumin, 1/2 liter of water and 2 teaspoons of salt.

stir 10min over medium heat and then add the raisins and chickpeas.

at the same time, in a separate pot, boil the previously soaked couscous. after 5 minutes, turn off the heat and serve it all together. bon apetit!!!! 💛
